Blueberry Scoop Pie
Need a quick Mother's Day dessert idea? Make mom a delightful Cornell Creme Scoop Pie.
All you need is a cooked pie crust (store bought or homemade both work great) and 2 litres of Cornell Creme ice cream. We used Boreal Blueberry for the one pictured here but you could make this with any flavour. We love Lemon Meringue, Natural Vanilla Bean or Velvety Chocolate Truffle for these. You can also mix it up with a combo of two flavours, or use a graham or chocolate cookie crumb base. The possibilities are endless. Top it off with fruit, dessert sauce, or crumbled cookies.
